Paul Kotuba Jr., Master Butcher
When we say master butcher, we really mean it. Paul Kotuba Jr., the oldest of the siblings, first started cutting meat at the age of 6 when his father asked him to be in charge of cubed steaks in the meat department — in addition to his other duties in the store and while tending to his younger siblings.
By age 7, Paul Jr. was making regular trips to the strip district and learning about the freshest products available. At 8 years old, Paul was attending cattle auctions in New Wilmington, Mercer and Enon Valley with his father and his uncle. Paul Sr. had a great eye for picking out the best beef at a sale and Paul Jr. quickly caught on. He started cutting deer by age 10 and learned to cut all varieties of meat by working along side his father throughout his teenage years.
Paul is extremely talented and a rarity in meat departments today. Most people take for granted how intricate and specialized this industry can be. Most meat cutters at chain stores would have no idea of how to breakdown beef and probably could not identify all the parts. Paul is not only a master at his craft, but also is an incredible cook and offers great grilling suggestions and recipe ideas to customers. He works diligently every day for his father’s legacy and to honor the family business.
